The diagram presents the methods and materials applied in the small-scale production of smoked fish.

 
In the first stage, the fish are cut open then put into the container filled with salt and water. After half an hour, they will be steamed with heat generated by fire for 5 minutes.
 
When the fish are hold in the basket, it is placed on the upper part of a vat where there is several burning charcoal used to make fish smoked, meanwhile, a wooden board covers the fish. This process lasts for 30 minutes, which is followed by the procedure of coloring. At last, the smoked fish are classified into two categories, namely smoked fish with yellow color or not before distributing to food shops or other outlets for consumers.
 
Overall, it can be seen that the production can be divided into three main distinctive stages, that is, steaming, smoking and coloring.
